The project’s aim consists in the development of an innovative and strategic approach regarding the improvement of milk industrial production by optimizing the current regional biorefinery process in the dairy field. After a preliminary analysis of whey and derivates qualitative characteristics and geographical distribution in Lombardy, the study focuses on the implementation of a pilot scale experience that ensures an efficient lactose transformation into high value chemicals and materials in order to minimize the industrial waste and enhance the existing production chain with the perspective of regional economic growth both at national and international level.
