Project mission
The project intends to promote an innovative approach for integrated control and careful validation of the production chain regarding a specific food category, namely ready-made sauce and fresh egg stuffed pasta dish. In collaboration with other European partners, the activities focus on improving existing analytical methodologies to identify the most effective strategy for assuring food authenticity and safety. This goal is achieved by mapping national products in agro food sector in order to validate the ingredients quality along full supply and production chain (i.e. processors, traders, retailers), in addition to biochemical and genetic analysis of organoleptic proprieties of specific products available for public sale.
